Ingredients: 2kg of healthy peaches, 2 liters of water, 800g of sugar.
Wash the peaches and dry them well.
Prepare the syrup by pouring the sugar in the water and making it boil for 5 minutes. Let it cool down. Do not takethe peel off, cut the peaches into quarters and place them into jars. Cover with the cold syrup and close the jars. Place them in a deep pot and cover with water. Boil the jars in bain-marie for 25 minutes. Remove the jars from the water and let them cool down.
Chop the amaretti biscuits and tha almonds, add the cocoa and the sugar. Cut the peaches in half, remove part of the pulp and add it to the mixture prepared before. Stuff the two halves with this mixture. Sprinkle the peaches with sugar and put an amaretto biscuits onto the top of each half. Arrange them into a baking dish, pour some wine on and cook for about 30 minutes at 200 degrees( spraying occasionally with the cooking juice).
